About the Flying V Team

Ken Harvey, Executive Chef
A truly great chef loves food. Loews Ventana Canyon Resort's Executive Chef Ken Harvey began his love affair with food when he was just 18, working in the produce department in a grocery store. There, he discovered new fruits and vegetables, learned to savor them, determine their point of perfect ripeness. He traveled to Houston to attend the culinary school at the Art Institute, and in 2001, after graduation, he interned at the St. Regis in Houston. He went on to work for the Ritz Carlton Houston and St. Regis hotels in Aspen Colorado and Laguna Nigel, California. In Tucson, he worked the kitchen at Hacienda del Sol and the J.W. Starr Pass Resort. Then, in 2007, he moved to the Loews Ventana Canyon Resort, and there he stayed, first as Banquet Chef and, finally, Executive Chef.

Josh Willett, Chef de Cuisine
From the time he served as a steward, Chef Josh Willett knew he belonged in the kitchen. He started as a prep cook, hungry for all he could learn about the culinary world. Hard work and determination won him a spot working with Master Chef of France Marc Ehrler in the AAA, Five-Diamond Ventana Room, where he sharpened his technical skills and continued to fine-tune his palette. He earned the title of Sous Chef, then Chef de Cuisine at the Flying V Bar & Grill, using his culinary precision and excellence to elevate the menu to new levels. He still considers himself a student of the kitchen, Chef Willett now shares his values and ideas with the Tucson dining scene when he teaches at Loews Culinary Institute, an occasional series of cooking classes held at the Flying V Bar & Grill.

Krista Owens, Executive Pastry Chef
Krista Owens took her talents to Tucson in December, 2010, when she left the AAA, Five-Diamond Ventana Room and returned to the Loews Ventana Canyon as Executive Pastry Chef. Her sweet, refined style and innovative approach have made the Resort's pastry experience even more exciting. When you dine at the Flying V Bar & Grille, be sure to save room for some of her signature desserts, like Vanilla Creme Brulee and Valrhona Chocolate Souffle.

H. Rock Saul, Manager Flying V Bar & Grill
After a decade at the Flying V Bar & Grill, H. Rock Saul is truly the rock that anchors every dining experience here. He's the first face you'll see when you enter the restaurant, and he's there throughout your meal to make sure you're loving your experience eating in Tucson and feeling at home. He says, you want to treat people well, make sure they're having a good time and make them feel comfortable so they feel they can come back any time, just like its their home. Hospitality is more than an industry to Rock, its a way of life. As he tells it, "I grew up in the South, in New Orleans, and that's what life is about, taking care of people." And that's what he's always done, building his career in fine dining and hotels. He managed three different Disney locations in Orlando, but for Rock, it's the relationships he's built here in Tucson that he holds closest to his heart. And he believes, building relationships is what its all about.
